The shop opens at 11:00 AM and we arrived at the shop at 10:55 AM. There were already three people waiting outside. The problem with almost every ramen restaurant in Japan is that they accept cash. So if you're planning a ramen trip, be sure to have cash ready. 💵 When you enter the shop, there's not a huge selection of menu items. All you have to do is choose your toppings and noodles. There are five options. 🍜 I ordered the shop's recommended noodles, the wavy noodles, which resemble potato chips. 😅 The soup was thick and flavorful, with diced chashu and bamboo shoots inside. The soup was slightly salty, with a tonkotsu (pork bone) base and a subtle fishy aroma. It was a bit too thick to sip. The bamboo shoots were tender and delicious, while the chashu was made entirely from meat. The highlight was the shop's handmade noodles. 👍🏻 The noodles were cold, likely boiled and shocked with cold water, resulting in a chewy texture that wasn't too soft. Dipping them in the hot soup makes the noodles even more springy and delicious. The wavy noodles, which have been soaked in the soup, bring out the full flavor of the soup. Another special feature I found on the table was seasoned puffed rice. 🫔 I tried it as a snack and it tasted like fried puffed rice, which was really fun. Adding it to the soup adds an extra crunch to the dish. It's a special combination that goes really well together. I highly recommend ordering several types of noodles to share. They're all delicious! 🥳
