Hello, Chengdu

Hello, Chengdu

may be the only city in China that has become a business card with "comfort" and "fun".

The

pace of life here is not fast

,

the life here is loose and informal

,

and the life here is leisurely and interesting

A pot of red soup and a cup of tea have created the fireworks in Chengdu.

There is no teahouse, Chengdu people have a job?

This is a sentence I often heard my grandparents and parents say when I was a child.

The

life of Chengdu people can be described as half in hot pot and half in a teahouse.

Hot pot allows you to experience the enthusiasm and hustle and bustle of Chengdu people;

The teahouse allows you to experience the leisure and comfort of Chengdu people.

Order a cup of old Chengdu's favorite ~ Sanhua tea in People's Park, lie down in a bamboo chair, and slowly and leisurely with friends, swing the dragon gate array, half a day has passed.

In Chengdu , it seems that everyone is optimistic.

I still remember the 08 earthquake, when optimistic Chengdu people gathered in Tianfu Square, and the sound of " Sichuan Xiongqi" resounded in the sky.

In Chengdu , even the national treasure panda is as greedy for this paradise as the people of Chengdu .

And this is the place with the most pandas in the world.

And the cement and steel bars that escaped from the city, Dujiangyan and Qingcheng Mountain , which are green mountains and green waters, let Chengdu people breathe the freshest air.

The

atmosphere of Chengdu seems to be dominated by the spicy and fresh aroma, and the men and women of the diet are passionate in the world of chili peppers and peppercorns.

From hot pot to Sichuan cuisine, Chengdu people are almost strict about eating and taste.

But Chengdu people are almost picky about the environment;

Chengdu people are good at discovering food in the "click corner"; An ordinary small noodle restaurant can also attract countless luxury cars.

And the heavier the flavor, the more the oil and brine skewers can pour out all living beings.

In Chengdu , the innovative Chengdu people mix shrimp slip with the millet spicy that Chengdu people love; A unique gourmet snack has been formed.

In Chengdu , I don't have to eat a Chengdu barbecue, how can I say that I have been to Chengdu ?

About the author

Strictly speaking, I am a third-generation Chengdu person.

Grandpa is from Chongqing Danzishi, grandpa is from Nanjing , Jiangsu Province ;

Because of the call of the state, they came to Chengdu and came to the Chengdu Cutting Tools and Measuring Tool Factory.

Here, they got married and had children, and they took root in Chengdu .

And I was born in the late 80s and witnessed the great changes that have occurred in Chengdu in the past 30 years.

The People's Park in childhood is now a concentrated place for the comfortable life of old Chengdu people.

The

most popular train in People's Park is gone.

And the tea fragrance of the century-old Heming Teahouse is overflowing.

About this travelogue

As a Chengdu person, when I write this travelogue, there will be some Chengdu/ Sichuan dialect in it.

Here is a simple popular science:

[Comfort] If Sichuan people like something, their favorite expression is "Comfort" and "This Comfort"

[啷一] pronounced làng ge means questioning; What is the meaning of the same

thing

[Dragon Gate Array] The meaning of chatting

[xuān boiling water] Boiling water

[huō you] the meaning of deception

[Electric horse] the meaning of the battery car

In

this travelogue, I will not write about those very traditional attractions. There is a lot of information on places like Wuhou Temple, Jinli, Du Fu thatched cottage, Qingyang Palace, and Huanhuaxi on the Internet.

As Chengdu people, we don't go to these places often.

I will write this travelogue from the perspective of the locals, from the niche but worthwhile places you can check in, to the food eaten by the locals; I will share my feelings.

Red Mansion Cutting Tool Factory - the place where my ancestors built Chengdu

When I was born, Chengdu did not have the current districts, only Dongcheng District and Xicheng District.

At that time, Chengdu had not yet built the second ring road, and the east of Chengdu was still farmland and wasteland, which was customarily called the "eastern suburbs" by Chengdu people.

In the fifties, workers from all over the country gathered in the eastern suburbs and built the first cornerstone of Chengdu's industry in an open space.

Among them, Chengdu's measuring tool and cutting tool factory is one of the representatives.

When I was a child, I often saw my grandfather often dig out the notebooks of that year, which were densely packed with hand-drawn drawings and full of Chinese and Russian, which was also a microcosm of the history of that year.

At that time, the Soviet Union aided the construction of the Harbin Blade Factory, and the Chengdu Cutting Tool Factory directly copied the Harbin Cutting Tool Factory.

In my childhood memory, this building was called the [Measuring Tool Building];

This building can almost be called a representative landmark of Chengdu that year.

Russian-style buildings, towering spire towers, the color is a faint yellow;

It can be called the most beautiful scenery in Chengdu.

Chengdu is very humid and stuffy in summer, and the basement under the building is the coolest summer resort for us.

When I was a child, I looked forward to sitting on the back of my bicycle every day after dark, choosing a factory gate with acquaintances on duty, and then slipping to the basement below the building, and a coolness came to my face.

In the era when there was no air conditioning, this was the best way to escape the heat.

Today's cutting tool factory has been relocated, and the people who lived in the factory area have been separated.

When I was a child, I always complained to my mother that living here, going downstairs to buy soy sauce, I had to say hello to a group of uncles, aunts, mothers-in-law, and grandfathers, which was really tiring.

When we were children, we didn't dare to cause trouble at all, and we were surrounded by acquaintances; It can be called a "human flesh camera" without dead ends.

Now, I am also married and have children; I began to feel more about the beauty and freedom of my childhood life.

At that time, we could run from three neighborhoods to one neighborhood at will; Secretly took out a piece of sausage from the refrigerator at home, ran to the "secret base" to light a fire to roast sausages to eat, and after being discovered by the adults, he immediately "swept away".

The

cutting tool factory has long since moved, and the history left by the ancestors and fathers with their youth and sweat has also been integrated into the city of Chengdu.

As the "third generation of the factory", we have also completely fallen in love with Chengdu , and Chengdu has also become our hometown.

People's Park - the condensation of Chengdu's comfortable life

Chengdu There is never a shortage of parks in this city; But there is no park that can replace the People's Park.

This retains the side of Chengdu's well, where square dance aunts of different small groups dance; Uncles who like calligraphy splash ink here.

The monument to the death of Xinhai Qiubao Road in the park records the signs of the progress of Chinese history.

In

1911, the Road Protection Movement broke out in Sichuan, and this 31.85-meter-high monument was several years old for the victims of this movement.

The ground cover of the monument is carved with reliefs such as locomotives and signal lights.

The former Shaocheng Park, then to the Road Protection Movement Monument, and then to the People's Park of the people of Chengdu today;

No matter your age, you can find your own way of leisurely entertainment here.

The

teahouse with strong Sichuan characteristics is hidden in the corner of the People's Park.

The sunlight shines through the hollowed out windows and shines on the bamboo chairs with a slight "pulp".

The

lotus flowers not far away are not all in bloom yet, but the green lotus leaves bring a coolness here.

When the lotus flowers bloom, photographers in Chengdu will take pictures of the lotus flowers here

And the boating project in People's Park is also a good childhood memory for many old Chengdu people.

Don't get a teahouse, Chengdu people are alive?

Strictly speaking, for Chengdu people, there are three things that must be done.

Drinking tea

,

playing mahjong

,

and eating hot pot

Among these three things, drinking tea and playing mahjong are done in teahouses.

It's hard to imagine that if Chengdu people leave the teahouse, they want to work?

I saw a data before, it is said that there are more than 10,000 teahouses in Chengdu alone; In these 10,000 teahouses, Heming is like a "white moonlight".

In People's Park, this century-old teahouse is basically full every day.

If you want to experience the most authentic way of drinking tea, then you must come to Heming early in the morning.

At 7:45 a.m., the ladies who had finished drinking morning tea had already left holding hands;

Their next stop was the vegetable market, which was busy for the family's three meals a day.

The founder of Heming Teahouse is from Dayi County, near Chengdu.

After a hundred years of development, the tiger head stove and buildings here have become witnesses to the history of Chengdu.

This kind of bamboo chair is a chair that Chengdu people like, there is no comfortable ergonomics, after sitting on it for a long time, you even feel "en" butt;

But this is also a sign that Chengdu people judge whether this teahouse is "qualified" or not.

Sichuan is a major bamboo-producing province, and just like giant pandas like bamboo, Sichuan people also like to use bamboo.

Perhaps this has something to do with the resilience of bamboo, just like the indomitable Sichuan people.

Chengdu people drink tea is very "formal", tea is not necessarily good, just "three flowers".

But the tea set must be for gaiwan tea.

The bowl lid is the sky, the boat tea is the earth, and the tea bowl is the person .

A cup of gaiwan tea reveals the philosophical views of Chengdu people.

A cup of three-flower tea can be described as the favorite of Chengdu people. The favorite tea of Chengdu people is jasmine tea, which is simply called "flower tea" by Chengdu people.

Jasmine tea is divided into 3 grades according to grade. The third level is the lowest, and Chengdu people directly call this tea "Three Flower Tea".

Chengdu people don't care about the temperature of tea or the strength of tea, what Chengdu people care about is the word "love".

Gently skimming this with the lid of the bowl, leaving aside the tea leaves and jasmine, and even more the worries of life.

A cup of cheap Sanhua tea can make Chengdu people relax.

And posing with three or five friends is a serious thing in the minds of Chengdu people.

A cup of tea, a plate of peanuts, this is the scene of an uncle leaving after drinking morning tea.

And here, the long-lost newspaper is still for sale.

Uncle reads the news of Chengdu Business Daily, which is still the way people in old Chengdu like to get news in the era of smartphones.

In these old Chengdu people, you can see their calmness and calmness.

A joke, everyone even "sarcasm" each other, all replaced by a smile on the corner of everyone's mouth.

Chengdu teahouses are often full of people, and everyone puts the dragon gate array "salty and flavorful".

Light three-flower tea, with the "salty and flavorful" dragon gate array, this is the taste of Chengdu's old teahouse.

Kuanzhai Alley—a reserve of old Chengdu memories
There

are hutongs in Beijing, alleys in Shanghai, Chengdu has alleys (the standard Chengdu pronunciation is: hàng ēr).

Chengdu in the new era has fashionable IFS and new Internet celebrity spiral bridges; But what is in the bones of Chengdu will not change with time, just like Tianfu Square in the city center and the wide and narrow alleys of the last imprint of the Qing Dynasty.

The

wide and narrow alleys during the day belong to tourists from other places.

And when night falls, the lights are on; Kuanzhai Alley has the figure of Chengdu locals.

The

aunts dancing square dances at the entrance of the alley occupied the "feng shui treasure land";

The

singer of the tavern in the alley plucked the guitar and sang folk songs.

According to records, the wide alley was originally called Xingren Hutong, the narrow alley was called Taiping Hutong, and the well alley was called Ruyi Hutong (Mingde Hutong).

In the 37th year of the Republic of China (1948), in an urban survey, legend has it that after measuring the workers at that time, they casually marked the wider alley as "wide alley" and the narrower one as "narrow alley", and the one with a well was "well alley".

These

small stalls sell all kinds of handicrafts in the wide and narrow alleys.

The quality is not exquisite, but as a souvenir, it is also a good choice.

If you want to ask "Nezha" Sichuan dialect how to pronounce it?

I guarantee that you will hear many versions.

The

old Chengdu-style teahouses are also preserved in the wide and narrow alleys, from the bamboo chairs to the tables are very authentic.

The difference between the People's Park Heming Teahouse and the People's Park should be that you can't hear the sound of Chengdu people "setting up a dragon gate formation".

There are many local catering brands in Sichuan in Kuanzhai Alley, but you may hear many Chengdu people say to you: Hi, which one goes to eat in Kuanzhai Alley, That is all "drinking" (meaning deception) foreign tourists.

Here, Gaiwan tea, traditional Sichuan opera performances, special Chengdu snacks, face changing, etc., have become a large collection; The young ladies at the door speak extremely standard Mandarin and are soliciting tourists from other places.

wide and narrow, narrow and wide;

Kuanzhai Alley is still a favorite place for outsiders and Chengdu locals.

is like the text on this wall;

I love you, Chengdu .

Chase Bay - a new Internet celebrity check-in place next to Taikoo Li

The origin of the name Fierce Chase Bay, some people say that it is because the Funan River turns a big bay here; Some people say that it is because the water level drop here has increased, the waves are turbulent, and the back waves push the front waves, forming a "fierce chase" trend, so it is called fierce chase bay.

But in the eyes of Chengdu people, the most familiar name here is "swimming pool".

Even though the landmark here is already the 339 TV tower, the station name here remains as "swimming pool" when you take the bus.

Chase Bay, once a bustling industrial area; But after 2000, it began to gradually decline, and it is close to Chunxi Road and Taikoo Li. on the one hand, it is a new Chengdu , a vibrant Chengdu ; Look at the appearance of the chase bay again, which is embarrassing.

Chengdu people have never given up on this land they love deeply. After the creation of Chenghua District, it has been reborn with bright colors and the historical precipitation of the old industry.

Fireworks in the world for three thousand years, Chengdu chases up and down!

Walking along the banks of the Funan River, the words and architecture here tell us.

Chengdu has not forgotten the enterprises in the eastern suburbs that have contributed to the development of Chengdu; Chengdu interprets those years with a new attitude.

The wooden seat, with a high and low match, is very similar to watching a dam movie in childhood.

The

most common street barbershop from childhood has survived.

The son poses in front of the mirror.

These words record the glorious history of these companies.

Chase Bay gives us a complete and clear memory chain.

And there are more small shops here that meet the tastes of modern people.

order a drink and sit by the Funan River; It's just that the drinks have been changed and the location has changed, and Chengdu still retains the love for "teahouses" in his bones.

"Penang" mural in Chengdu

I once visited Penang, Malaysia, and I love the murals in Penang. I always hope that one day such murals can appear in the streets and alleys of Chengdu.

The "tree painting" here in Chasing Bay kept me pressing the shutter button in my hand.

These "tree paintings" not only add childlike fun and color to Chengdu's joints; The whimsical painters also beautified the scars, nodules, and traumas on the original tree trunks.

The "tree paintings" here are full of strong Sichuan characteristics. When I saw the 4 words hot pot base, I laughed out loud.

The

sun god bird unearthed in Jinsha also appears on the "tree painting".

Sichuan elements can be found everywhere here.

For example: Mahjong

The son said that the two wattles are really spicy.

If

you look closely at these paintings, you can see the "slightly dark" side .

The

takeaway brother gave the rabbit a "spicy rabbit head"......

movie characters come together here

A

cheetah drawn in the shape of a tree

Pinocchio with a long nose is a secondary creation created by artists using the protruding form of the trunk itself!

Draw using the shape of the tree itself, the darkness is very obvious here; These paintings have a 3D three-dimensional feel.

Walking along this side street, we are attracted by the paintings on the trees again and again. Again and again I sighed at the whimsical ideas of painters.

And this mural is hidden in the alley, and the "sugar and oil fruit" painted on the picture happens to be my favorite snack in Chengdu .

The

characters of the Three Kingdoms also rubbed mahjong.

The red rabbit horse has become the "electric horse" in the population of Chengdu

The sight of a cutie waiting for you is heartwarming.

And the chipmunk was pushing open the window to see who came out of its window.

A

cute panda

The

inspiration for this picture, I guess comes from Sanxingdui.

It is about a 5-minute walk from Chengdu's most prosperous business district.

Taikoo Li's food is on the high side, so if you're in the mood for authentic food, take a few extra steps to the nearby East Street for a hot pot or a snack at Xiangxiang Alley. Chengdu people will always find the most "comfortable" street.

Chenghua Park - Chengdu's post-70s and post-80s childhood happy times
The

new Chengdu stands, and the old Chengdu is gone.

These things are destined to become our memories.

The new Chenghua Park replaced the amusement park, and part of the "tumbling train" that scared us back then was preserved.

The

most terrifying spinning track of the year is now a great place for photography.

The

cement floor was also surrounded by wetlands;

The

reflection in the water gives the track a sense of extension.

The slightly dilapidated track that has been surrounded by wetlands and the 339 TV tower not far away form a strong visual impact.

The collision of the old and the new has given Chengdu its own cultural atmosphere and heritage.

One hand holds the future and modernization, and the other hand holds our history and memory.

Living Water Park - Chengdu's "Green Lung" In

the 80s and 90s of the last century, the scene of "Zhuojin Qingjiang flowing for thousands of miles" in Li Bai's poems has long disappeared, replaced by industrial wastewater and domestic waste brought about by urbanization... The whole city is filled with the smell of decay and sourness; Funan River is called the "Decay River" by Chengdu people

This park gave a new breath to the "Decay River" that had just been renovated and dealt with at that time.

The concept of constructed wetland water treatment was very advanced for Chengdu people.

Today's living water park is surrounded by wetlands and filtered by layers of pools, making the plants here full of vitality.

And the good ecology here also has a lot of small fish and shrimp.

The good environment here also makes everyone choose this place for leisure and entertainment.

There are memories in the eastern suburbs - Chengdu old times
Not

far from the Internet celebrity construction road is the memory of the eastern suburbs.

The

original factory building retains its original appearance

In

this environment full of literature and music, the abandoned valves have been renovated and can also exude an artistic atmosphere.

The words "water saving" in front of the sinks in major factories have also been completely retained.

The

Dongfanghong train retains the appearance of the years

The

preservation of the green train also gave my father's youth a place to rest.

Dongjiao not only has memory, but also integrates music.

The murals here are always related to music.

Occasionally come here to listen to a small concert, Chengdu people's lives are so unhurried, just right.

Music and old machine tools have preserved the youth of every Chengdu person in the memory of the eastern suburbs.

Panda Base - Chengdu's proudest zoo

It is no exaggeration to say that this is Chengdu The most popular park.

Men, women, old and young, here will take you back to kindergarten in an instant.

Follow the road signs and you can see the panda.

Pandas are really lazy, and we see many pandas here almost lying down and gnawing bamboo like this.

or

all kinds of parties

That's how it is

Lie down like this

Smaller pandas can still "get stuck" on trees like this

These

pandas live a fairy life, envy~

Smell it, whether it's fresh or not

Open gnaw

Panda pups like to sleep in trees.

Find a comfortable position to sleep in.

Yes, just sleep on your stomach

A

few months old panda slept in a bamboo basket, and no matter how tourists shouted outside, it still slept soundly.

The

peacocks in the park make slightly harsh noises and do not disturb the pandas' lazy lifestyle.

Is such a panda a Chengdu person?

Another

star of the panda base is the red panda

Compared with the laziness of giant pandas, red pandas are much more lively.

After taking this photo, I looked up and saw a red panda hanging on the tree.

Instantly felt that my face hurt so much.

Beihu Wetland Park - a good place for Chengdu people to have a picnic

Where do Chengdu people spend their weekends?

Beihu Ecological Park must be counted as one.

Regarding the origin of Beihu, it is officially said that it came from the depression formed after the Qin minister Zhang Yi built the city of Chengdu in 311 BC.

This is also part of the cultural tourism Chenghua, which is close to the panda base, and in Beihu Park, panda elements can also be seen everywhere.

The

jogging track in the park is also a pleasant thing for the keeper.

The North Lake has beautiful scenery and clear water

This is a paradise for animals.

Next to the wetland by the lake, Chengdu people spread picnic mats here to enjoy the green weekend leisure time.

Dujiangyan - the land of the heart of Shu
>In 270 BC, King Zhaoxiang of Qin (his mother was Empress Dowager Xuan, who was Miyue in the TV series "The Legend of Miyue") appointed Li Bing as the governor of Shu County. Li Bing's primary task as a prefect was to control the floods. This not only benefited the people of Shu County, but also related to the unification of Qin.

This is my aerial view of the Dujiangyan water conservancy project.

Dujiangyan is absolutely not visually impactful compared with the majestic and powerful barrage dam in modern people's impression.

The

turbulent Min River passed through the [Yuzui] and was diverted by the water. The Minjiang River is divided into two parts, namely the Neijiang River (for the irrigation area of the Chengdu Plain) and the Outer River (which joins the Minjiang River and later into the Yangtze River).

During the dry season, the inner river accounts for 60% of the water volume, and the outer river accounts for 40% of the water volume. When it is in the wet season, it is just the opposite, with the inner river accounting for 40% and the outer river accounting for 60%.

In this way, the purpose of regulating water volume can be achieved without human intervention. Turning blockage into sparseness, a harmonious handshake between man and nature has been achieved.

When the

Minjiang River hits Yulei Mountain, the water flows in the curved section, resulting in centrifugal force, and the bottom water mixed with sediment flows to the Feisha Weir. The larger the flood, the stronger the sand discharge effect of the flying sand weir. while the upper Minjiang River, which has little sand content and good water quality, enters the Chengdu Plain through the mouth of the treasure bottle. The problem of sand discharge in water conservancy projects that has plagued water conservancy projects to this day was dissolved by the ancients through the power of nature more than 2,000 years ago.

[Treasure Bottle Mouth] - The water inlet of Yulei Mountain was artificially carved out. Whenever the flood season comes, the mouth of the treasure bottle can limit excessive water intake and drain excess water from the flying sand weir next to it.

The Dujiangyan water conservancy project built by Li Bing and his son is beneficial for thousands of years; Therefore, they also entered the temple to become gods.

Between the high and low pavilions, there are countless plaques engraved on the walls, including "Qianqiu Liuze", "Shangshan Ruoshuang", "Liji Si Min", "Dehao Gongshen", "Land and Sea Unparalleled" and so on.

The inscription of the three characters of the Erwang Temple comes from the inscription of General Feng Yuxiang.

And there is also Deng Xiaoping's inscription here, benefiting all generations. If you look closely, you will find that there is one less point in the wording, and there are different interpretations.

And on the wall here, from the Qin Dynasty to the present, for more than 2,000 years, generations of water control people have engraved the summarized experience on the wall.

Anlan Bridge

Off the pile and the mouth of the vase

In the Qin Dynasty more than 2,000 years ago, Li Bing chose to respect nature.

He did not regard Dujiangyan as an artificially controlled river, but he followed Taoism and nature, and followed Eastern philosophical thought.

Let the Dujiangyan be natural and natural, and it will be new over time.

Dujiangyan uses the water of the Min River to silently carve this land.

It has given birth to the busy wharf of "Shu Jin", "Jinguan City" and "Menbo Dongwu Wanli Boat";

Without Dujiangyan , all this would not have been possible; Without Dujiangyan , the reputation of "the land of heaven" would be nonsense.

This is the heart of Shu - Dujiangyan .

Qingcheng Mountain - the birthplace of Taoism in China

During the reign of Emperor Shun of the Eastern Han Dynasty, Zhang Daoling, the founder of Taoism, practiced medicine and preached here, and saw the quiet environment here, so he decided to preach in Qingcheng Mountain .It is said that he "became an immortal" at the age of 123, so Qingcheng Mountain has always been regarded as one of the birthplaces of Taoism.

Take the cable car and the first place you will arrive at is Tsz Wan Pavilion. Ciyun Pavilion is a heavy eaves resting on the top of the mountain, with the front eaves extending from the embrace building.

It does not have the grandeur of traditional religious temples, but it gives birth to a Chinese-style simplicity and elegance.

The green smoke here is repeated, which is a devout bow for tourists.

The

three words Shangqing Palace were inscribed by Jiang Zhongzheng. The outermost couplet, "Virtue , non-action , unspoken teaching, Dacheng is like a lack of heaven to get clear", is Feng Yuxiang's handwriting, from the "Tao Te Ching".

Tao and De, these two words almost run through the history of Chinese civilization.

Laojun Pavilion, the highest peak of Qingcheng Mountain . The entire building of Laojun Pavilion has a total of 8 floors and 8 sides, symbolizing the 8 hexagrams mentioned by Taoism.

In Laojun Pavilion, surrounded by mountains, the scenery here is unique.

Qingcheng has a unique scenery.

Tai'an Ancient Town - the back garden of Chengdu people
At

the entrance of the ancient town is an ancient stone archway with the inscription " Tai'an Ancient Town" Four big characters.

The ancient town is not large, mainly farmhouses.

It is worth visiting this ancient Tai'an Temple.

Tai'an Temple was founded in the Tang Dynasty, and several very thick ancient ginkgo, Zhennan and red bean trees next to the temple are set off.

The temple is golden, the bells are faint, and the pine waves are bursting.

Walking in front of the temple is a pleasant feeling.

Perhaps such a quiet environment is one of the reasons why people in Chengdu love this place.

Chengdu gets more exciting the more you stay at night
The

streets of Chengdu are at the beginning of the lanterns

The

crowded IFS

TV

Tower 339 with colorful lights

The

nightlife of Chengdu people has never left the fireworks of the world.

Jianshe Road - Chengdu Fireworks Breath Land

All over the world, maybe you will walk through many streets called "Jianshe Road", but the most unforgettable one, It must be the construction road of Chenghua District.

The

entire street is filled with large and small restaurants, and there are almost all kinds of snacks.

The unit price is not high, the portion is not large, and it will hardly make you worry about whether your stomach will be supported.

There is no off-peak season here, day and night.

It is a food street on Jianshe Road that was spawned by the students of the University of Electronic Science and Technology in the factory area, which can also be regarded as Chengdu people's late-night canteen.

Food in Sichuan, taste in Chengdu
When intangible cultural heritage meets hot pot - Chengdu hot pot next to Taikoo Li
You can

walk 5 minutes from Taikoo Li to East Street; This street is full of hot pots, and most of the famous hot pots in Chengdu have branches here.

And when it comes to hot pot with Chengdu characteristics, I have only found this old hot pot so far.

As soon as you enter the store, you will see fresh vegetables; I thought this was a model made of plastic, but when I picked it up, it turned out to be a real vegetable.

"Distinguished guests are here, please come inside"; This kind of shout has not been heard for a long time. This long-lost sense of ritual makes people feel cordial.

Sichuan The traditional culture and craftsmanship of old craftsmen are gradually forgotten by us. But here, these memories are displayed and preserved.

While eating hot pot, you can enjoy these intangible cultural heritage works like visiting a museum; As a Chengdu person, it is also a very proud thing.

The

combination of red and blue in the store has an inner flavor~

Secret duck intestines, large slices of fresh tripe; I drooled when I saw it.

Yellow throat and mille-feuille are also must-order dishes.

checked the information, the hanging dragon ≈ beef tenderloin, the meat is tender and has a chewiness; The hanging dragons in this house are all cut after ordering.

The entire cutting and plating process is visible.

Snowflake beef, the taste is also very good, one bite, it is full of beef aroma;

Their luncheon meat is the luncheon meat that can kill Merlin in seconds, and there is so much meat that it is "on top";

As a crab fillet lover, the crispy tribute dishes paired with shredded crab meat are not too perfect.

Blood is cooked until later and then eaten, the more you eat, the more flavorful it becomes.

Hand-made shrimp slips can be used in both red and white pans;

The dragon beard bamboo shoots of Mount Emei, the crispy texture, and the fragrance of bamboo shoots, make people can't stop eating chopsticks at all.

I recommend blanching chicken feet in hot pot, and it will melt in one sip.

Pea bacon rice adds Sichuan people's favorite bacon to it, and the oil of the bacon and the aroma of peas are perfectly mixed, making people think of two bowls after eating one bowl.

Generally speaking, the snacks in hot pot restaurants will have brown sugar glutinous rice cakes; But in Chengdu , there are few that have done well.

This brown sugar glutinous rice cake is really "roaring ci", the glutinous rice cake is soft and glutinous but has a chewy texture. Paired with seasoned soybean flour and sesame powder, it is by no means sweet and greasy, and it is a compound aroma in the mouth.

Their pot base is different from the traditional hot pot, which is the "Sanqi pot", that is, the seven-point red pot and the three-point sauerkraut crispy meat and bean curd pot.

The black bean curd freshly ground every day, paired with crispy meat with a lot of lean meat, plus Sichuan pickled sauerkraut, the more you eat this pot base, the richer it becomes.

The red pot made with more than 30 kinds of spices is not spicy; The best thing is that this pot base will not be bitter until the end.

How to suffocate a Sichuan person?

When eating hot pot, ask him, is this good? Can this be eaten?

He must be on the verge of collapse.

Accept this guide to eating hot pot, I hope it will be helpful to you.

Fresh tripe "seven up and eight down", about 20 seconds is fine;

Mille-feuille tripe will cook for a little longer, usually about 2 minutes.

Houtang Old Hot Pot Old Chengdu Hot Pot Market

Address: No. 166, Lower East Street, East Street

Qualified traditional Sichuan cuisine is here

At the intersection of Zhangjiaxiang, the appearance of this Sichuan restaurant made me regain the taste of qualified Sichuan cuisine.

"garlic sprouts back to the pot"

Stir-fry a little Pixian bean paste until fragrant, then add a few tempeh, a little soy sauce, no need for more seasoning; You only need to fry the two-knife meat until it just starts to "nest", and then fry the garlic sprouts quickly, which may be the most representative of Sichuan cuisine - garlic sprouts back to the pot.

"boiling fish"

This is a Sichuan dish that tests the chef's skills, although the ingredients are simple; But the process of making and grasping the heat are a difficult task.

And this boiling fish can tell if the restaurateur knows how to dress; For the "most tricky" Chengdu people, peppercorns and chili peppers are authentic and unauthentic, and they know as soon as they eat them.

The

spicy fish is thin and tender, and it is definitely a great tool for rice.

"Boiled Meat Slices"

while ago, Li Yifeng made "Boiled Meat Slices" on the hot search;

Perhaps this is a feeling of the old Chengdu people, this is a Sichuan dish that we would only make during the festival when we were children, the meat slices are not oily, but cooked in water, hence the name boiled meat slices; The leaves of the green bamboo shoots are used as the base, and the fragrance of the green bamboo shoots forms a strong contrast with the aroma of the meat.

In the face of such a food, there is no choice but to shout, waiter, make another bowl of rice.

"Mapo Tofu"

This is a Sichuan dish that I have never been able to make myself, but it is also the Sichuan dish I order the most frequently.

Red oil, watercress, and tofu are perfectly matched in this mapo tofu; The consistency should be very stable to wrap the tofu tightly, and the Hanyuan peppercorn noodles sprinkled at the end sublimate the compound taste. You only need to mix a spoonful into the rice, which is the bibimbap that Sichuan people like.

"Cold Chicken"

A Sichuan vegetable farm is not authentic, and a cold chicken can be regarded as an inspection standard. This dish is also a must-serve dish at the Chengdu New Year's dinner.

Red oil must be fragrant, chicken must not be firewood; Remember to pack it after eating.

Chengdu people's evaluation of deliciousness must be, pack this dish, I want to take it home and eat it.

"Silk Rabbit"

Rabbit is so cute, of course, it needs to be braised and dried, and roasted to eat~

I saw a previous article that said that Sichuan alone eats 300 million rabbits a year. This is enough to see the love of Sichuan people for rabbits.

and the Hankun-flavored silk rabbit is so delicious that you want to pack it up and take it home; rabbits are not firewood or dry; Rabbit meat still retains a little moisture; The most special thing is that the outer skin of the rabbit has a pickled and spicy taste, while the inside is the scent of Sichuan peppercorns. It's simply irresistible.

"Snacks"

As a Sichuan restaurant suitable for entertaining friends, special snacks are naturally not to be missed. The old Chengdu's dan dan noodles, glutinous brown sugar glutinous rice cakes (not fried), and red oil dumplings, each of which is worth a serving.

"Guifei Duck"

This dish is the same signature dish as the silk rabbit. The salty and fragrant taste, when eaten in one bite, the faint spiciness spreads on the tip of the tongue.

The duck meat is chewy and feels good when torn by hand.

This is a "noble duck" that eats and packs half of it home, a bite of duck and a sip of beer in summer.

This kind of life is very Chengdu .

Your uncle is always your uncle's Uncle Wang barbecue

This is a barbecue restaurant that has been eating for over a decade. For Chengdu people, the three words "fine roasting" are not only a test of taste, but also a test of time.

Chengdu , a food city, has too fast the iteration of catering; It often disappears after being popular, and there are only a handful of restaurants in Chengdu that can withstand the "strong winds and waves" .

But this barbecue has achieved the three words "fine grill".

"Chicken Neck"

This should be a signature dish that allows Uncle Wang to break out of the siege in the Chengdu barbecue circle. The chicken neck has a crispy and tender texture, which is endlessly memorable.

The roasted pork belly at the uncle's house is different from other families, the pork belly cut into small pieces is worn according to the fat and thin intervals, and the two pieces of lean meat are sandwiched between the three pieces of fat. And the time has come to test the skills of the barbecue master, and use the oil aroma of the pork belly fat to stimulate the aroma of lean meat when grilling. When eating, let the fat meat not be greasy, and the lean meat not woody; It tastes sizzling and oily, and you can't stop sucking strings after strings.

This is my must-order grilled pork ribs every time I come to my uncle's house. The faint smoked bacon ribs collided with the aroma of barbecue, creating an addictive grilled pork rib in one bite. When you bite into it, the taste of the cured ribs and the taste of the barbecue seasoning are fused and separated;

In my opinion, Chengdu barbecue is absolute, it retains the original flavor of the ingredients.

Uncle's grilled chicken wings can be said to be a very special existence. The position of the chicken tip is very thin, the middle wing meat is very thick, how to grill the chicken wings to the flavor and not burn, bake the paste, this is really difficult.

The skin of the chicken wings served is golden and crispy, and when you tear the chicken skin lightly with your teeth, the chicken skin will gently crack and stick to the mouth, lick your lips with your tongue, and the taste of barbecue will slowly spread in your mouth .

is a drop, Chengdu people not only like to pound meat, but also like to pound corn.

"Baked potatoes, roasted red taro powder" These dishes are very outstanding, and if you want to eat vegetarian, these are recommended.

This dish is available in almost every barbecue restaurant in Chengdu , but there are not many that can make the tofu delicious.

Making pulp tofu is a "grinding" job, and it is a heavy physical job from the beginning of tofu production. The prepared tofu is carefully cut into pieces, grilled over charcoal for about 70%, plus various seasonings, houttuynia officinals, minced meat, millet spicy, etc.; Put it on an iron plate and then grill it over charcoal, and this pulped tofu is done.

Pick up a piece of pulped tofu with chopsticks, blow hard, and wait until the temperature drops before eating.

The

barbecue at Uncle's house is not only traditional meat, but now there is also small yellow croaker.

9 pieces of 9 pieces of flower armor is also very cost-effective.

This dish is actually more like a dessert after barbecue, with stretched cheese, eat it in one bite; Let the spiciness of the barbecue disappear invisibly.

A
skewer that makes you blush and your heart beat - spicy skewers

This restaurant is known as " the spiciest skewer shop in Chengdu ";

But don't be scared away, it's really not so exaggerated; For Chengdu people, the spiciness of this restaurant is a little spicier than that of ordinary skewer shops, but it is by no means so spicy that you can't taste the aroma of skewers.

Small portions will definitely make you eat hot. This spiciness comes from the combination of spices.

As an old Chengdu person, I have never seen a boss who is so willing to put ingredients on the table.

When small dishes are served, they are superficially full of chili peppers, crushed peanuts, etc. piled up by the boss; Be sure to "set aside" the seasoning with chopsticks before eating.

Pick up a piece of luncheon meat with a variety of mixed spices, and as soon as you take a bite, the spicy smell will hit your brain.

Their rabbit loin and crispy taste are also very good.

This folded ear root can definitely be regarded as their "king fried" dish. Strictly speaking, I don't like to eat folded ear roots, and I don't like to eat the leaves of folded ear roots, but the folded ear roots of the spicy family are roots, and after being fried, the folded ear roots in the original special smell have become "docile and obedient"; a faint fragrance is awakened; Combined with the seasoning, it tastes very touching.

In the store, you can see many Chengdu people ordering this dish, one bite at a time, and then taking a sip of beer, this feeling, Bashi~

As an old Chengdu , to see how a restaurant is cooked, I usually go to the material area first, especially this leafy dish, Once something is not new, it can be seen at a glance.

Iron beef is also a must-try, the beef is large and tender. Before putting them in the pan, remember to separate them.

The
taxi master's private collection— Huang Ji's home-cooked noodles

In Chengdu , the most important point to identify whether a noodle restaurant is good or not is to look at how many taxi masters come.

The

masters who walk the streets and alleys should be the most knowledgeable noodle eaters in Chengdu .

And this magical noodle restaurant is not only the favorite of taxi drivers; At the same time, there are many good places for people who drive luxury cars to eat noodles.

This store is a typical Chengdu mom-and-pop shop. The proprietress controls the taste, and the boss is responsible for recording the needs of diners and collecting money.

The boss's work is more like the "hallkeeper" of old Chengdu , even if there is a price list on the wall, but diners are more willing to ask the boss's opinion.

This kind of humanized and personalized service is detailed to "whether the noodles are rake or hard", "less noodles and more vegetables", "add a point of Shaozi" and so on.

The

proprietress picks the face

The boss adds "soul green bamboo shoot leaves" to each bowl of noodles

Then according to each diner's order, just put your own fried Shaozi

This shop is famous for its deluxe noodles (meaning a mix of many types of shozi).

Eel noodles

In addition to traditional pasta, this restaurant also has a very home-cooked red oil flavored cold chicken, and crucian carp with a good fish aroma.

I heard that this is because the husband and wife used to cook private dishes in Chengdu's most famous "Langyu", and later because of "Langyu", they came out to make home-cooked noodles.

No matter how many words I have to describe the deliciousness of the noodles, it may not be as direct as the picture of diners eating noodles.

A must-eat snack on Jianshe Road - Shrimp Slip

Jianshe Road, which is full of merchants and food shops, must stand tall. This is absolutely impossible without housekeeping skills.

Their shrimp slip is to remove the shell of the shrimp and then beat it thousands of times to make the shrimp meat sticky. The addition of whole shrimp gives the shrimp smooth both a crispy texture and maintains a strong shrimp flavor.

Top with the boss's secret sauce

I personally recommend this "Spicy Garlic Millet Pepper Shrimp Smooth", which has a mixed taste of garlic and millet spiciness; For those who can't eat spicy food, remember to choose a spiciness that suits you. Whether you eat it in your mouth or bite half of it, you can see the figure of the shrimp. There is no flour feeling, the mouth is full of shrimp meat, so happy~ They also have many flavors of shrimp slippery, like my personal favorites are Tom Yum Gong and Chongqing old hot pot.

When the chewy shrimp is slippery and becomes crispy on the outside and tender on the inside, you can't stop taking a bite.

King crab fillet For me, it is a snack to pack after eating. Their crab fillet is paired with meat floss and seaweed, with a crispy yellow light. This combination is one word to describe "absolute".
