Must do activities

Hi- it’s our first time to Amelia Island. There will be 5 of us visiting - the kids ages are 16,17,22. What activities do you recommend? I am looking into a kayak tour to see dolphins and manatees: do you recommend a certain company we should look into? We are looking forward to a relaxing week with some activity.
