What to do in August that's not a theme park?

Hello! Family of 4 - Looking for suggestions on things to do in Orlando before a cruise mid August. Originally we were going to go to Universal but decided against (due to cost, Epic open /crowds / heat etc). We have 3.5 days.

So far we have Kennedy Space Center, Cocoa Beach (maybe 1-2 nights there?), bioluminescence kayak tour/manatees near Cocoa beach.

Would there be enough to do to spend all 3 days at Cocoa beach? Obviously it will be hot so not sure how likely it is that we'll be spending hours at the beach.

Love to get any suggestions on things to do.
