Kauai itinerary input needed 06/30-07/04 (5 days/4 nights)

Hi, we just booked a late trip to Kauai and will be in the Poipu area. Our party has 2 adults + 2 senior citizens + a 8-year old kid. Due to the senior citizens we will doing very little hiking but are going to do a lot of driving to overlooks. We are generally wildlife/nature focused on our trips. I love snorkeling so we will probably do a couple of snorkeling trips with my kid at local beaches including Poipu. Also an avid birder so some of my locations will involve some extra time around birding like Koke state park. So here is our itinerary - would love your input.

06/30 - Fly into Lihue - Land at 11 am - After lunch - Local Poipu beach activities and snorkeling and quick trip to see the Spouting Horn at sunset

07/01 - North side - Day trip from Poipu hotel to Kilauea Point National Wildlife Refuge and Hanalei NWR for birding and general scenic drives on the way - hectic day

07/02 - Waimea Canyon, Koke state park and Na Pali coast - mostly driving - hectic day

07/03 - Debating this day whether we keep the Na Pali part for this day instead of the previous day and do a boat tour while keeping the focus on driving Waimea and birding Koke state park on 07/02 (previous day)

07/04 - Relax in the Poipu area in the morning and fly back at 1:30 from Lihue airport

The dates are fixed but the plans can be moved around based on what makes most sense. Would like to hear your input. Our package includes breakfast so we plan for an early start/breakfast and taking packed lunches (if that option is available). I realize 07/01 and 07/02 are super hectic days so we might split them between 07/01 and 07/03 and keep it light on 07/02. Confused about whether we should do a No Pali boat tour or just drive to the state park.
