Cod Fish Skin with Obsiblue Prawn, Caviar
The presentation of this dish is very thoughtful, with crispy fried cod skin placed on a clean white stone, topped with crystal blue prawns and black truffle, offering a rich taste experience.

Roasted Frog Leg with Garlic Chives Purée & Crispy Smoked Eel
At first glance, it looks like a crab cake, but when cut open, it's actually frog leg meat. The frog legs are roasted, tender and smooth, and the garlic chives purée adds a delicious flavor.

Matsuba Crab Custard, Uni & Shaved Sturgeon Caviar
At first sight, you see a golden crispy cracker topped with sea urchin and caviar, which is mouthwatering. Inside the glass is a custard of Matsuba crab, and you mix the crispy top into it for a fantastic taste.

Foie Gras, Lemon Grass Ginger Jus & Dark Chocolate Roll
I've had pan-fried foie gras before, but this is my first time trying it steamed, and it's surprisingly delicious. The foie gras is smooth and not greasy, with no gamey taste. Paired with a Dark Chocolate Roll, it's an interesting texture.

Monkfish Cheek, Pan-Seared Crispy Monkfish Liver
It looks like roasted pork belly, but it's actually fish. The monkfish is extremely tender, with crispy skin and a fragrant layer of fish fat. Each layer of the fish is delicate and distinct. Paired with golden fried monkfish liver, it's crispy and delicious.

M8 Oyster Blade Beef, Oyster Leaf Salad with Blue Cheese Dressing
You can choose the doneness of the beef, and I chose medium this time. The beef is perfectly medium, tender and juicy, with a rich flavor and fat content. It comes with truffle mashed potatoes and roasted baby potatoes as side dishes, which are very satisfying.

Classic Apple Pie with Parma Ham & Meat Floss
The combination of Napoleon pastry and apple is innovative, with a crispy crust and soft apples creating a perfect texture. Paired with Parma Ham Cream, it's quite tasty.
