Amid the hustle and bustle of Kimberley Road in Tsim Sha Tsui, Bama Ramen has become a must-visit pilgrimage site for ramen lovers with its signature rich broth and hearty ingredients. There is always a long queue outside the shop. This time, I specially went to try several signature dishes and found that the reputation is well-deserved.

Duck & Scallion Ramen $118
As a limited-time offering, it truly lives up to expectations!
The broth is simmered for 6 hours using whole rice duck bones and fresh vegetables, presenting a deep amber color. The first taste is a rich duck fat aroma, but the finish is surprisingly refreshing. Paired with duck slices slow-cooked with plum powder, the tender pink cross-section shows perfect doneness, creating a wonderful balance with the pungent aroma of plenty of green onions and scallions. It’s savory and delicious without being greasy.

Seared Pork & Seasoned Egg Ramen $95
A must-order signature ramen! It elevates the classic tonkotsu ramen to a new level. The milky white broth has just the right thickness—not too sticky, yet perfectly clings to the noodles. The chashu, after being seared, has a semi-transparent fat layer that melts in your mouth, leaving a lingering fragrance. The medium-thick straight noodles have excellent elasticity, fully carrying the broth without losing chewiness. Excellent!

Hanetsuki Gyoza $35
Edamame $22
The gyoza wings are pan-fried to a golden crisp, with juicy and full fillings. Dipping them in the special gyoza vinegar enhances the freshness. The edamame is simply salted, making it the perfect palate cleanser.

The fresh apple aroma combined with the stimulating carbonation effectively balances the richness of the ramen. Highly recommended personally.
