The spatial design of the "Zhanlu" restaurant echoes the ocean imagery of the hotel's overall design axis. The luster and natural texture of the coral reef rocks on the seabed create a grand landscape image and combine it with contemporary rounded light and shadow to present a visual sense of shallow sea basins. The Chinese chef is in charge of the restaurant, focusing on Greater China cuisine. The chef uses his own more than 20 years of profound skills to integrate ingenuity to optimize the dishes, selects local ingredients to inject Taiwanese soul, and re-sorts Cantonese, Shanghai, and Sichuan dishes to satisfy the multiple experiences of vision, smell, and taste, and further evolve traditional Chinese cuisine.
The highlight of the Chinese cuisine, "Zhanlu Peking Duck", is a carefully selected Pingtung warm-body cherry duck. It is first marinated with an exclusive sauce for 2 days, then blown and colored with pure maltose, then air-dried for 12 hours, refrigerated for 4 hours, etc. Finally, it is slowly baked in a Cantonese hanging oven with a fine fire to produce a crispy skin, paired with an elegant cinnamon dipping sauce; it is recommended to order it. Due to the complicated production process, please make a reservation two days in advance (a limited number of eight ducks are available per meal, and the reservation will be closed after it is sold out).
