Specialty sugar shop Toutaro is a cafe that was built in a renovated 100-year-old building in Kyoto.

The concept of the shop is

"We only use high-quality sugar. The sugar that's right for you."

The sugar served at the cafe is unrefined sugar called "molasses sugar."

It contains a lot of minerals, and is said to have a deeper, fuller flavor.

The castella cake that comes with the drink is made with four types of sugar, including rice sugar.

By the way, rice sugar is said to be the oldest sweetener in Japan!

This time I ordered
"Coffee x Matcha" 850 yen "Summer mandarin fresh pudding" 720 yen

The fresh pudding comes in three types: "Wasanbon," "Matcha," and "Seasonal fruit."
They sprinkle a generous amount of Wasanbon on top.
"Coffee x Matcha" is a drink with an impressive contrast of three colors.
They use matcha from Yasohachi Ryobasha.
