Puyang Specialty Food Guide

Must-Try Delicacies
Wrapped Liangpi
- Features: A creative twist on liangpi by Puyang locals. Translucent, chewy liangpi is spread flat and wrapped around shredded cucumber, gluten bits, crushed peanuts, cilantro, etc., drizzled with sesame paste, garlic sauce, and secret-recipe chili oil, then rolled into a cylinder. A summer must-have for beating the heat.
- Recommended Spot: "Yijichang Liangpi" (Renqiu Road, Hualong District, original store) – The birthplace of Puyang wrapped liangpi, known for its thin-yet-chewy skin and unique seasoning, hailed by locals as the "ultimate rolled liangpi."

Puyang Zhuangmo
- Features: A hearty folk dish dating back to the Ming and Qing dynasties, with a diameter of up to half a meter and a thickness of about 5 cm. Made with scalded dough as the wrapper and filled with fatty-lean pork (or beef/lamb), the crispy, layered crust and rich, savory filling earn it the title "Central Plains pizza."
- Recommended Spot: "Liu Ji Zhuangmo" (West Section of Hongqi Road, Puyang County) – A third-generation family business insisting on hand-chopped filling and wood-fired griddles, where meat and dough flavors meld perfectly. Many travelers make special trips to take some home.

Huaji Soup
- Features: A classic banquet soup from rural traditions. Pork tenderloin is coated in sweet potato starch, pounded thin, and simmered in broth. The tangy, appetizing soup reflects Puyang locals' pursuit of "smooth, tender, and fresh" perfection.
- Recommended Spot: "Old Town Huaji Soup" (National Day Road, Puyang County, a time-honored snack shop) – The broth is simmered with beef bones, served with paper-thin meat slices and freshly fried dough sticks, a top breakfast choice for locals.

Zao Fish
- Features: A traditional dish from fishermen along the Yellow River in Fan County. Wild crucian carp is salted, fried, then layered with fermented rice and spices in a clay pot. The fish absorbs the aromatic zest, tasting even better cold.
- Recommended Spot: "Fan County Ancient Town Zao Fish Restaurant" (Downtown Fan County Old Town) – A century-old shop using ancient clay-pot braising methods. The fish melts in your mouth, perfect with drinks.

Qingfeng Flat Noodle Dish
- Features: Made with large-pot stew and flat noodles. A big pot of broth is boiled first, then flat noodles are cooked in it, followed by tofu slices, pork blood, and greens. The result is fragrant and mildly spicy, often paired with flatbread. Free refills of broth are common, and it’s nutritious yet affordable.

Other Specialty Foods
Fried Sausage
A delicacy with intricate preparation, mainly made from pork blood and intestines. Water and starch are mixed in a pot, heated while stirring until thickened, then kneaded with dry starch into sausage shapes and steamed. Sliced thin when cooled, it’s pan-fried until crispy and served with garlic-salt sauce for a unique flavor.

Duanjiaju Sausage
With a history dating back to the Han Dynasty (called "Yuefu Sausage" then) and served as tribute during the Ming and Qing dynasties, it’s renowned across the Central Plains as a "Dragon Town specialty." The long-lasting aroma and chewable richness make it irresistible.

Pucheng Mixed Stew
A soup dish typically made with meatballs (minced meat mixed with flour, starch, and egg batter, fried and sliced), cauliflower, bell peppers, assorted meats, and tofu. The cross-section of the meatballs absorbs flavors from other ingredients, offering a mix of crispy, sticky, oily, smooth, tender, and savory textures.
