Pilaf, also known as pilaf, is a traditional and iconic food found in West, Central, and South Asia. Different regions have distinct flavors, driven not only by the ingredients but also by the meat. Common characteristics include cooking the rice in broth, adding spices, meat, vegetables, and dried fruit, and ensuring the rice grains separate rather than cling together.
Besh Qozon, a magnificent multi-story restaurant, is renowned for its authentic Uzbek pilaf. On the ground floor, chefs stir giant pots of pilaf, drenched in grease and topped with tender chunks of meat. I ordered local bread, a plate of lamb pilaf, a few slices of horse sausage, and some dill salad to cut through the fat. The food arrived incredibly quickly, and the presentation lived up to its name. The pilaf was tender, and the carrots, rice, and raisins were fragrant—a truly delicious experience. A truly authentic Uzbek dining experience.
