[Hakata Motsunabe Ooyama Ginza] Japanese style tripe hotpot with chewy large intestine✨ But with burdock🍲

You can eat Motsunabe (tripe hotpot), a representative dish of Fukuoka, in Tokyo.
While walking around Ginza, I suddenly felt like eating warm soup, so I went to Ooyama Motsunabe Ginza branch. It is a famous chain store in Fukuoka, but it is also popular in Tokyo~

🚪 Store atmosphere
The moment I got off the elevator on the 9th floor, I was in a luxurious and Japanese-style store!
The entrance was so sophisticated that my expectations were high.
When I opened the door and went in, the staff greeted me very kindly and guided me to a seat!
The interior of the store was neat and modern Japanese.

📖 Menu selection - A la carte instead of a course
I originally thought about ordering a course, but I chose a la carte because I thought I wouldn't need salad or yukhoe.
But I wanted to eat a lot, so I ordered Miso Motsunabe + 1 serving of Motsu + 1 serving of assorted vegetables (chives, cabbage, burdock) + a bowl of rice.

🍽️ The new appetizer
The basic appetizer that came out as soon as I sat down!
Something chewy came out on a small plate, and as soon as I took my first bite, the rich taste like cheese + chewy texture was so new.

When I asked the staff, "What is this?", they said it was tofu. It wasn't just any tofu, but a special tofu with a deep flavor that seemed to have been aged.

🍲 Finally, the main dish! Miso Motsunabe
After a while, a hot pot of motsunabe filled with chewy tripe appeared!
The broth was topped with plenty of chives, cabbage, and thinly sliced burdock, so it looked great.
Usually, when you make tripe stew, chives, cabbage, and bean sprouts are the main ingredients,
but here, the thinly sliced burdock was the key point that really brought out the savory flavor. I made the right choice to order some extra vegetablesㅎㅎ

The tripe was so soft and chewy! There was no smell at all, and the chewy texture in my mouth was the best.
Usually, there is no tripe in gopchang jeongol and it is full of vegetables, but here, the amount of motsu that comes as a basic dish was not small! Since the two of us ate 3 servings of motsu, I think we ate until we were sick of itㅎㅎ🥹🤤

The broth was definitely rich in flavor because it was miso-based. However, it felt a little salty, so I asked the staff to add a cup of water and seasoned it. It was just the right amount when I ate it with a bowl of rice!

Originally, I was going to add noodles at the end, but there was more than I thought.
After adding motsu, the amount of tripe was generous, and after eating it with rice, I was full, so I ended up giving up on adding noodles.. 😭

Next time, I want to try the shoyu (soy sauce) motsunabe instead of the signature miso!

💡 A little tip
✔ The miso base is a bit saltier than you think, so I recommend eating it with rice!
✔ If you add tripe, the amount will be quite large, so if you're not a big eater, the basic amount is enough!
✔ They say that the ramen〆 is also delicious, but it can fill you up, so order it in advance!
✔ Be sure to try the tofu that comes as an appetizer! It has a unique flavor that's amazing.

If you want a really luxurious and delicious Japanese tripe hotpot, I highly recommend Ooyama Motsunabe Ginza branch!
In particular, the miso motsunabe with burdock was a perfect combination of deep savory flavor and chewy tripe.
