This udon features a rich white dashi cream soup and Hakata Kanefuku mentaiko, the perfect complement. 👀

Topped with a variety of toppings, including green onions, shiso leaves, deep-fried nagaimo yam, roasted sesame seeds, and maitake mushrooms,
it's delicious to the last bite. 🎶
(The nagaimo and maitake mushrooms were especially delicious. 🤤)

The chewy noodles are homemade, with a high water content. 👀
This texture is apparently achieved by boiling them using a unique pressure cooker method. ✨✨
