Wan Chai Hokkaido popular authentic ramen

This popular ramen restaurant from Hokkaido, Japan, has one branch located at The Johnston in Wan Chai, close to Lee Tung Street, Wan Chai Station. It specializes in authentic Hokkaido ramen using three different types of noodles: Hakata noodles, aged noodles and tsukemen.
.
The store is spacious and comfortable, with a simple and stylish design that creates a Japanese-style space, with traditional Torii and samurai decorations.
.
🔸Wagyu Beef Salt Soy Sauce Ramen - $128
The clear and non-greasy soup is made from Japanese beef tendons that are simmered over a long fire, giving it a strong beef flavor; slices of Japanese Kagoshima A5 Fukunaga Wagyu beef ribs are richly marbled and evenly distributed like marble, dissolving the sweet aroma of beef fat, which is delicate, tender and juicy; the thinner Hakata noodles are smooth and chewy when eaten.
.
🔸Exploding Wagyu Tsukemen - $128
This is the first Tsukemen series in Hong Kong. The tsukemen sauce is made with Japanese beef and Hitani black bean miso from Nasu City, Tochigi Prefecture, Japan. It has a strong aroma and is spicy. The cooked noodles are boiled in the traditional way and then soaked in cold water. They are thick and chewy and are especially suitable for soup.
.
🔸Wagyu Back Fat Wagyu Donburi - $58
A mini version of the signature donburi, topped with pieces of slow-cooked wagyu beef, with fine marbling like frost, the meat is extremely soft and sweet, topped with soy sauce and mirin sauce.
.
🔸Slow-cooked beef with eggplant - $78
The soft and crispy eggplant is juicy and delicious, which just balances the greasy texture of the beef. The slow-cooked beef is especially tender and juicy when cooked medium rare.
.
🔸Mango Green Tea - $28
🔸Oolong Green Tea - $26
Refreshing and elegant Japanese green tea, one cup has the sour and sweet mango aroma, and the other has the sweetness of oolong tea, achieving a perfect balance between bitterness and sweetness.
