Delicious pickled fish

As soon as I walked into Portland World, a rich, spicy and sour aroma hit me. Inside the small shop specializing in pickled fish rice noodles, a chef was simmering steaming pots of rice noodles in a large pot.

The boiling broth simmered in the pot, tender fish slices and tart pickled cabbage tossed in the red oil, while the white, tender rice noodles absorbed the broth's essence. Each time a pot was ready, the chef neatly ladled it into a large bowl, sprinkled with cilantro and peanuts. The vibrant red broth, adorned with vibrant green, was a sight that would make you salivate.

Holding this bowl of hot, spicy pickled fish rice noodles, I felt warmed before I even ate. In this slightly cooler season, what could be more soothing than a pot of freshly cooked rice noodles?
