[Oita, Onsen Prefecture] Freshly ground, freshly made, freshly boiled handmade soba certified shop [Takada Soba Sho]

They use buckwheat flour from Bungotakada and hand-make their soba.

They adhere to the three principles of freshness: freshly ground, freshly made, and freshly boiled.

A certified hand-made soba restaurant,

there are 12 certified soba restaurants in the city.

This time, we visited Takada Soba Sho,

located near the shopping district.

We ordered a large serving of Zaru Soba and chicken soba.

Bungo Takada soba is harvested twice a year, in spring and autumn,

New soba is available in July and November.

The soba was chewy and fragrant, and delicious! ❗️

The dipping sauce was on the sweet side.

It takes a while for the two of them to prepare it.

The tempura also sounds delicious,

I'd like to try the tempura Zaru next time.

After our meal, we recommend strolling around the cute, retro shopping district.
