Not just a culinary delight, but also an enlightening experience at a Japanese Omakase

Located in Sheung Wan, this Japanese Omakase restaurant is themed around Kyoto's bamboo garden, featuring elegant decor and a tranquil ambiance. The chef meticulously prepares each dish and thoughtfully explains the rare ingredients, offering not only a feast for the palate but also an enriching experience.

The meal begins with an appetizer of Nagano tomatoes and water octopus, refreshing and delightful. The Kyoto-style persimmon box paired with shrimp is uniquely flavorful and memorable. Following this are dishes like white squid with red sea urchin, Aomori Spanish mackerel, and Hokkaido Pacific saury, each showcasing the natural essence of the ingredients. The white-spotted prawn is prepared with shrimp paste, butter, and sweet sake, resulting in a rich and enticing flavor.

A standout dish is the Chinese-style crab delicacy, with the crab shell filled with succulent crab meat, truly mouthwatering. The Tokoname abalone is paired with dried scallops and fish maw, stewed in a rich broth that layers the umami flavors. The true bonito is grilled with yuzu and served with caviar, a perfect combination that leaves a lasting impression.

The sushi selection includes five varieties: golden eye snapper, Amakusa prawn, leatherjacket fish, striped beakfish, and sea urchin with tuna tartare and grilled matsutake mushrooms, all bursting with aroma and full of surprises. The sour kombu turtle fish offers a rich texture.

The meal concludes with a warm bowl of red clam miso soup and desserts of single-wave chestnut and Shizuoka melon, providing a perfect ending to this chef-curated experience. The entire meal is a feast for both the eyes and the taste buds, leaving an unforgettable impression.
