The abalone is as glossy and tender as coagulated fat, topped with finely sliced green onions like a sheer green veil. The radish beneath has absorbed the essence of the sauce, soft but not mushy; the salty freshness of seaweed adds another layer. The spiciness of the shichimi powder is a bit overpowering, but the subtle elegance of the seaweed powder perfectly highlights the abalone’s fresh and sweet flavor.

O-tai, amberjack, and red snapper — three types of white fish served in thick slices, with no sinew or residue where the blade passed, sliding over the tongue like silk. The fish is fresh, delicate yet profound.
