Macau's New Michelin One-Star Restaurant

Previously visited Macau's newly awarded Michelin one-star restaurant [Tan Wai]—absolutely worth a visit! The restaurant is located on the first floor of Wynn Palace, bright and eye-catching. Within less than a year of opening, it has already garnered numerous accolades, including a Michelin one-star rating, Black Pearl Restaurant recognition, and a spot on Asia's 50 Best Restaurants list.

Tan Wai is helmed by Chef Tam Kwok Fung, who creates hundreds of new dishes annually, showcasing incredible creativity. Here are three must-try dishes from this restaurant:

1️⃣ Sweet and Sour Pork
This is one of Chef Tam's signature dishes, made with carefully selected Iberian black pork from Spain, using the premium part around the pork neck. Through a secret cooking method, the dish achieves an ultra-thin crispy coating, bursting with rich aroma and leaving a lingering taste. Besides the pork, it is paired with five ingredients of varying acidity, such as pickled ginger, young ginger, pineapple, and rice vinegar, each offering a unique tangy flavor.

2️⃣ Ge Zha (Tai Shi Dish)
This dish appears twice on the menu—once at the beginning and once at the end, with one savory and one sweet version. The meal starts with Hairy Crab Ge Zha, which is fresh, smooth, and aligns with seasonal ingredients. It features a crispy exterior and tender interior. After much thought and refinement, the Ge Zha achieves a flavor reminiscent of crab soup and a jelly-like texture. At the end of the menu, Pumpkin Ge Zha is served, differing in appearance from the Hairy Crab version. The distinction becomes apparent upon tasting, showcasing a delicate contrast between northern and southern Ge Zha styles.

3️⃣ Prince Pigeon
Made with 21-day-old pigeon, this dish features a specially crafted sand ginger flavor. The crispy-skinned, juicy pigeon exudes a southern charm.
