[Kagawa Gourmet] Handmade Udon Ueda: Excellent Dashi

Ueda Handmade Udon, located in Takamatsu City, Kagawa Prefecture, is a highly recommended restaurant with excellent broth. It's a self-service restaurant, so you choose your toppings—fried foods, inari sushi, or rice balls—and then proceed to the register. They'll bring out the bowl containing the udon or soba noodles, where you can pay. You can boil the noodles yourself and add the dipping sauce. You can also add chopped green onions, grated ginger, and tempura flakes as toppings. This time, I ordered a small bowl of warm udon noodles with a side of broth and lotus root tempura. The broth is mild yet robust, making it incredibly delicious. The udon noodles are also incredibly smooth and easy to swallow. I went before noon on a weekday, and it was already crowded, but I was able to get a seat right away. Apparently, there are long lines on weekends, and they sometimes sell out. It's rare to see udon restaurants draining the water, so it was a rare experience, but I thoroughly enjoyed it.
