In the heart of Takayama's old town, which still retains the essence of Edo-era Japan, the small cobblestone streets and rows of wooden houses are bustling with tourists strolling along, camera-toting. Among them was us... who had come to discover the legendary sushi at "Hida Beef Sushi," a renowned restaurant that everyone must try at least once. 🇯🇵

As soon as we arrived at "Hida Kotte Ushi," the first thing we saw was a simple wooden sign with the iconic Hida beef logo. The aroma of grilled beef wafted into our nostrils even before the door opened. 🍖 The sounds of people ordering mixed with the laughter of tourists waiting in line. The atmosphere was simple, yet filled with the warmth and friendliness of true Japan.

This restaurant doesn't have a large menu, but everything looked delicious, especially the Hida beef sushi beautifully arranged in a glass display case. Thin, deep-pink slices of beef were gently grilled by the chef himself. The "sizzling" sound of the meat touching the fire made our hearts race. 😍

When it was our turn, we ordered our most popular set—three pieces of Hida beef sushi. Served on crispy crackers, each bite is sprinkled with a touch of sea salt and topped with fresh wasabi. From the first bite, the flavor melts in your mouth softly. The tender, fatty meat perfectly complements the subtle aroma of the grill. There's no fishy smell, but a balanced salty-sweet flavor that makes you close your eyes and absorb the flavors without realizing it.

As I stood in front of the restaurant, a cool breeze blew gently through the small alleyway, constantly bustling with people. Behind me, the bells from a nearby shrine could be heard faintly ringing. Everything seemed simple, yet impressive. It was a fleeting moment, a true sense of Japanese charm—the flavors, the mood, and the atmosphere.

After finishing my last bite, the chef looked up, smiled, bowed slightly, and said, "Arigatou gozaimasu." A simple but sincere greeting, it made me understand why this restaurant has become a must-visit landmark in Takayama for travelers from around the world.

Hida Kotte Ushi may be a small restaurant nestled in an ancient alleyway, but it boasts a charm that extends beyond its size—its unforgettable taste of Hida beef. And from the warm atmosphere, it feels like time has stopped for a moment. 🍣💗

If we ever have the chance to visit Takayama again, no matter how cold it is… we're ready to stand in line again to taste our favorite Hida beef sushi, warming both the taste and the heart. 🐮✨
