When you come to Xi'an, you can't miss the popular local restaurant "Guo Lao San Noodle Shop"! This time I ordered the super classic biang biang noodles and a portion of homemade rice jelly, and it did not disappoint.

The jelly skin is icy and cool, with a smooth and chewy texture. It has only a light salty taste when eaten alone, but it has a richer flavor when paired with a special sauce, giving a refreshing and appetizing feeling.

The highlight, the biang biang noodles, lived up to its reputation. The noodles were thick and chewy, and you could feel the handmade elasticity and chewiness in every bite. The sauce was fragrant but not greasy, and the aroma was tangy after mixing well.
